Local Expert Offers Books On Preserving & Canning

James R. Coffey, announces the release of his two canning books, Country Canning and Country Canning II. Found primarily in stores in SE Pennsylvania, Delaware, & NE Maryland, the first book, Country Canning, sold out soon after publication. Fans have been eagerly awaiting more copies, and Mr. Coffey's 2nd book!

Please enclose check or money order plus $4.00 shipping for each book ordered. Maryland residents please add $.84 per book in sales tax (6%). All books will be autographed unless otherwise requested. This column includes recipes for Cranberry Apple Jelly, Pomegranate Jelly, Dandelion Jelly, Rhubarb Jelly, Raspberry Rhubarb Jam, Blueberry Rhubarb Jam and More!

General Directions For Making Bread Spreads Using Commercial Pectin

Wash and rinse jars (this can be done using a dishwasher). Prepare canning lids according to manufacturer’s directions. Measure sugar and set aside for later use. This is where the two pectin methods now change.

Make Your Own Marmalades!

It's time to start canning! If you've missed my previous posts on HOW to can - you'll need to read them, first! I will share at this time Late Winter and Early spring recipes for seasonal items as they are available. Please feel free to send in your own favorite recipes and we will try to include them. Oranges and Kumquats are in season at this time of the year and now is a good time to make these marmalades.

Orange Marmalade

6 large oranges
5 pounds sugar
1 #2 can crushed pineapple (Do not drain)

Yellow Split-Pea Soup

There's nothing like a bowlful of this flavorful, filling soup to wake up your senses and fill your soul - and your stomach - with love! Add crusty bread and a salad for a complete meal! Serves eight, including finicky children!

Lavender, White-Chocolate Scones

Adapted from a Cooking Light recipe (can you say, “Low-fat & guilt-free”???); these are my family’s favorite breakfast treat! Light, fluffy & delicious – I always make a double batch!

Ingredients:
2 cups all-purpose flour (white wheat does NOT work well here)
3 Tablespoons sugar
1 ½ teaspoons baking powder
½ teaspoon salt
5 Tablespoons chilled butter, cut into small pieces
½ cup fat-free milk
1 large egg white
½ teaspoon vanilla
¼ cup dried lavender (I used Harney Lavender tea – make sure yours is edible!)
1/3 cup white chocolate chips

2 teaspoons fat-free milk
